Sustainable Sourdough
Sourdough made with organic flour is the most environmentally sustainable bread to bake. It is the bread with the highest nutritional value and as well as being delicious, it is also the easiest bread there is to digest.
The foundation for success in life is good health. With more and more studies show that good health starts with good soil and if you look closely at soil under a microscope you can see that soil has it’s own ecosystem and it needs to be treated with respect – after all it is what sustains us. From good soil we get nutritious wheat and it follows that by using sourdough to bake our bread we get a more nutritious loaf that means that more of the micronutrients are available for use to use. So I bake using organic flour, and long slow fermentation that means the bread is not just delicious, but wholesome in every sense.
I am also part of a global food movement who believe that we can change the world through our food choices. I want a future with fresh air, clean water. It is only fair that our children should be able to to eat nutritious food grown on land we haven’t contaminated and to enjoy fish caught in seas we haven’t plundered and polluted.
The whole of the bread making process is linked to the planets’ health and ultimately our own wellbeing and future as a species. Even before the grain is planted in the soil the make up of the soil affects the nutritional value of the food we eat. From the variety of the grain that we choose grow, to the milling process to the way in which we make our bread, every stage has nutritional, environmental and social consequences for both our own individual health and our world.
Here is a list of some of the other things I do as part of being a food activist.
- We garden using Organic principles and I am member of Garden Organic.
- Cook using local fresh food whenever possible
- I am a member of The Organic Soil Association
- Every month I give a small monthly donation to Greenpeace,
- I am a member of the Realbread Campaign.
- Use as much Fairtrade produce at every possible opportunity
- I bake using Organic flour and organic flour from our local mill
- Milk is bought via our local greengrocer from our local dairy farm or we buy organic British milk
- We keep our own chickens so all our eggs are free range
- We have a herb garden so I avoid buying imported herbs.
