We have created this base Diversity Blend Flour No. 0+ from a dozen ingredients including YQ population wheat. This blend has been specifically developed so that you can then personalise your baking by adding your own botanicals – freshly milled, dried or ground herbs, spices or edible flowers.
The Diversity Blend aims to mimic a meadow. Not the monocultures that have come to dominate our landscape, but a riotous blend of colours, smells and textures: wheat, barley, lentils, oats, nettles and more. This diversity of ingredients nourishes a variety of bacteria in your gut, provides you with a wide range of nutrients and adds a beautiful, complex flavour and texture to your baking!
Profits from this flour are turned into vouchers. Those vouchers allow GPs who have been trained by The Sourdough School to prescribe sourdough lifestyle medicine courses to their patients, along with some N0.0+ flour to get them started. Making your own sourdough bread is a therapeutic act, one that has the power to nourish your gut, body and mind.

Instructions for use:
Add up to 5% botanicals and use with your usual bread flour for diversity and breadth of flavour in your baking. Use our Diversity Blend No. 0+ flour in place of wholemeal flour.
