The Sourdough School Diploma In Nutrition & Digestibility of Bread
The Sourdough School Diploma in Nutrition & Digestibility of Bread is a 12 month structured online course that is delivered through a series of video tutorials, live workshops, related recipes that you bake in conjunction with the syllabus. The year is divided into 3 terms and with in each term are the modules that you complete.
Course Structure
- Each month you will be given recipes to bake,
- Each module features practical baking, cooking and fermenting tasks for you to complete.
- You will also be given a reading list, and research studies to read which align with the module.
- There will be a live lessons every month on Wednesday evenings. These will also be recorded so you may catch up if you are not able to attend.
- Live Session 1: An introduction to topics and tasks. A 1hr webinar tutorial with Vanessa Kimbell giving you an overview of the monthly topic and syllabus and discussing the main baking points. This session is about the bread-making, with sourdough tips and advice, and is followed by a Q&A on baking.
- Live Session 2: Sourdough Clinic. Each week Vanessa Kimbell will be live on your student discussion forum to answer questions, discuss your bakes and troubleshoot.
- Guest Tutors This session is where one of our experts deliver a presentation on the topic of the month. You will have the opportunity to submit questions in advance of live sessions and take part in an open discussion at the end of the session.
- There will be monthly pre-recorded lectures, these will need to be watched before the second live session and will mean you are best placed to submit your questions to the guest speaker and take part in the online discussion.
- You will have a higher levels access enabling you to view the diploma level access to the recipes and tasks through logging into to the Sourdough Club. You will also find much more, including extra recipes and practical tips, techniques on perfecting your technique and more.

Once you have completed the Diploma you may if you wish apply for the Sourdough Teaching Diploma
Open your own affiliated Sourdough School
When you have completed both the Nutrition & Digestibility of Bread and the Teaching Diploma you may apply for a Sourdough School Licence and we will support you in setting up and opening your own affiliated Sourdough School.
