Our protocol lays out a new standard for bread because frankly, we deserve better. Ultimately, we want to create a safety net that no bread falls below, containing a certain amount of fibre and nutrients.

The Sourdough School is a world-renowned centre of education for baking, boasting over 500,000 social media followers and a multidisciplinary team of expert bakers and healthcare professionals.

Suffice it to say, we are a recognised authority when it comes to any and all things baking- especially Sourdough.

Whether you are a small bakery, an industrial bread producer or a medium-sized business, you can apply for Sourdough Accreditation today.

If your bakes fulfil our criteria (as laid out in our protocol), you’ll receive a Sourdough School Approved logo on your packaging, with a film about your bread made here by the team that means as your customer is looking at your product they can literally watch the video about why we think it is a bread that is nourishing.

SSA status ensures that your product supports the health of people and the planet.

So we don’t disapprove of adding in fermented ingredients into yeasted bread – in fact we think it is a great way to improve flavour and nutritional value, but we don’t like fermented ingredients being passed of as fermented bread!

Our Diversity bread is the full monty …  and our logo is also a recognised mark of quality, particularly important as consumers become aware of “sourfaux” products on the shelves. We have an enhanced with sourdough approval to explain partial fermentation too.
